Zucchini rolls with shrimps and quinoa recipe


  • 1 Zucchini
  • 10 Cherry tomatoes
  • 1 lemon
  • 20g Walnut
  • 60g Cheese
  • 200g Shrimps
  • 30g Quinoa
  • 1 Garlic clove
  • Parsley or coriander
  • Salt and pepper
  • Preparation:  30 min
  • Cooking time:  10 min
  • Total: 40 min
  • Yield: 20


Add the quinoa in a pan and add water equivalent to two times the volume of the quinoa. Bring to boil and let it cook for 10 minutes at a low heat.

Turn off your stove and set the quinoa aside. Let the quinoa absorb the remaining water for around 10 minutes.

Slice the zucchini on its length and mix it with the lemon juice then set aside.

Cut the tomatoes, garlic clove and parsley into very small pieces and mix it with the cheese. Season the mixture with pepper and salt.

Cut the shrimps into small pieces and mix it with the two previous mixtures.

Place a teaspoon of the filling on the zucchini slice and roll. Hold it using a toothpick and its ready!
