Wholemeal Dough

Ingredients for 6:

  • 500g wholemeal or buckwheat flour
  • 500g white flour 55
  • 8 eggs
  • 1 tbsp olive oil
  • Utensil: A pasta machine

1- Mix the 2 flours, make a hollow in it on the work surface.

Add the eggs and oil. Turn gently to incorporate the ingredients. Add lukewarm water depending on the consistency.

2- Roll the dough twice so that it becomes homogeneous and smooth.


Do not work this dough too much, otherwise its fibers break. Ideal for stracci, pizzacheri ….
