- 2 Zucchini
- 1 Eggplant
- 3 Tomatoes
- 400g Canned tomato
- 200g Lasagna noodles
- 100g Mozzarella
- 3 Garlic cloves
- Seasoning: salt and pepper

Slice all the vegetable as thin as possible along its length.
Grab the pan you would like to use and add the first layer of noodles at the bottom. (Around 3 noodles)
Spread half of the canned tomato sauce evenly on the first layer of noodles.
Layer half of the zucchini, eggplant and tomatoes on top of the sauce and add a little bit of mozzarella and garlic. Add lasagna noodles on top of the vegetables and repeat the process.
Season it with salt and pepper. You
can also add a little bit of cheese if you want to.
Bake at 180°C for 1h15 to 1h30 minutes.
