Vegetable fritters from Provence

Ingredients for 6:

  • 1 zucchini
  • 1 eggplant
  • 1 red pepper
  • 1L of frying oil
  • 200g tempura mix flour
  • salt and pepper

1- Wash the vegetables. Detail them in sticks. Reserve.
2- Pour the oil into a fryer and heat it to 180 ° C
3- Make the dough of the fritters by mixing the flour with 20CL of water so as to obtain a homogeneous dough.
4- Dip each vegetable stick in the fritters dough.
5- Dip the vegetable sticks in the hot fryer. When they have a nice color, drain, salt and pepper them.
