Paella Recipe


  • 3 cups Fish or chicken
  • 2 cups Risotto rice or paella rice
  • ½ cup Peas
  • 12 Jumbo shrimp
  • 1 cup Dry white wine or Grape Juice
  • 2 Chopped tomatoes
  • 1 Chopped onion
  • 2 Garlic cloves
  • Pinch of Saffron threads
  • 5 tbsp Olive oil
  • ½ tsp Sugar
  • Pinch of Salt
  • Preparation: 10 min
  • Cooking time: 40 min
  • Total: 50 min
  • Yield: 4 to 5 servings


  • Heat a large pan at medium heat with the oil and fry the onion until it softens then stir in the garlic.
  • When it starts to color, add the chopped tomatoes and stir for few seconds.
  • Add the sugar, salt, paprika and saffron and stir for about 2 to 3 minutes.
  • Add the rice and stir constantly for few minutes until all the grains are coated. Add the wine and let it cook at low heat until it almost dries. (should take about 15 – 20 minutes)
  • In a separate pan prepare the chicken broth and bring it to boil. Add the boiling broth to the paella and cook for 15 minutes.
  • Season the shrimp and peas and add it to the pan. Cover and cook for 5 to 7 minutes.
