Healthy Rice Cake Recipe

Ingredients

  • 200g Whole grain rice
  • 100g Almond Flour
  • 50g Whole wheat flour
  • 1 Egg
  • 4 tablespoon Breadcrumbs
  • 2 tablespoon Olive oil

Instructions

  • Soak the rice in a hot water for 1 hour.
  • Boil water of approximately 2.5 times the volume of the rice. Salt the water and let the rice cook for 30 minutes.
  • When done, let the rice cool down then mix with the rest of the ingredients until you obtain a smooth and even texture.
  • With the help of a rolling pin, stretch the mixture to about 5mm.
  • Cut into the desired shape with cookie cutter or simple household items like drinking glass.
  • Brown the biscuit from two side in the oven.
  • Let it totally cool down before serving.

Note: If you have gluten intolerance, you can replace the wheat flour and the breadcrumbs with maize flour.

Rice cake with almond flour is easy to prepare and makes a very good healthy snack. Besides soaking rice for 1hour you can also take rice leftovers from your lunch and directly mix it with the ingredients and bake for few minutes and your snack is ready.
