Cannelés Bordelais Recipe


  • 150g All purpose flour
  • 200g Caster sugar
  • 50g Butter
  • 1/2L Milk
  • 2 Egg yolk
  • 1 Egg
  • 1 Vanilla pod
  • Preparation:  20 min
  • Cooking time:   45 min
  • Total: 3h


  • In a pan, add the milk and the butter and heat it up with a low - medium heat.
  • Split the vanilla down its length and scrape out the seeds. Add the seeds and the vanilla pod in the milk.
  • Whisk the eggs for few seconds then and the warm milk slowly into the egg.
  • In a separate bowl, mix the flour and the sugar.
  • Pour the milk mixture in 3 batches at the center of the flour and whisk well in-between each additions.
  • Allow the mixture to rest for at least 2 hours in the fridge. (10 – 12 hours is better)
  • Preheat your oven at 220°C and grease all the pan.
  • Pour the mixture in each of your pan and bake for 20 minutes at 220°C.
  • Reduce the temperature to 180°C and continue the baking process for 10 to 20 minutes depending on the size of the pan.
