Button Mushrooms Salad

Ingredients for 4:

  • 400g button mushrooms
  • the juice of 1 lemon
  • 1/2 tsp thyme flowers
  • 1 shallot
  • 1 tbsp olive oil
  • 1 bunch of chives
  • 7 tbsp of fresh cream
  • 2 white onions
  • 1 tbsp paprika
  • salt and pepper

1- Cut the earthy end of the mushrooms. Peel the heads, separate them from the feet and mince them into strips. Drizzle them with lemon juice. Season with salt and pepper and sprinkle with thyme. Macerate at least 1 hour.
2- Chop the stems of the mushrooms. Keep aside.
3- Chop the shallot. Brown it dry in a pan until it becomes transparent. Add the oil, allow to brown, then stir in the mince of mushrooms. Cook for 10 minutes.
4- Salt and pepper the mince, add 1 tbsp chopped chives. Let cool. Mix with the cream. Reserve the sauce.
5- Carefully drain the mushroom strips. Season them with the sauce. Flavor with white onion rings and the remaining chopped chives. Sprinkle with paprika and serve
